After I interviewed Tzuco chef Carlos Gaytan for the FEASTS AND FASHION podcast, he remarked that it was unusual because no one had ever asked him fashion-related questions before.
He handled them quite well as you’ll hear when you listen to his episode. We chatted about so much more, of course, including his unique culinary point of view, which has garnered him many awards. He’s also considered an ambassador for Mexican cuisine, and he travels the world cooking for dignitaries and celebrities.
Watch a couple of clips below of our conversation, including his tortilla preference, how he learned from his grandfather how to respect Mexico’s native ingredients, and his opinion on how Mexican fare has evolved.
The full episode of our interview on the FEASTS AND FASHION podcast is out now. You can also listen to it on your favorite podcast platform.
Another fantastic episode of Feasts and Fashion!
